Easy Breakfast Tortilla Recipe – Quesadillas

Enjoying a long breakfast is a very good start on a new day. I’m not a morning person so I prefer not doing any complicated cooking in the morning but it’s nice to try new breakfast ideas during the weekends.

Here at home, we eat a lot of eggs, a lot! Another favorite is quesadillas. So why not combine these two?

A couple of weeks ago I came across a recipe on breakfast quesadillas and I wanted to try them, making the eggs the way we like to eat them. These breakfast quesadillas have become a new favorite in our household.

Here is the recipe:

Breakfast Tortilla Recipe – Quesadillas

This breakfast recipe with tortilla bread has become a favorite of ours.

1 quesadilla

1/2 onion
1/2 tomato
2 eggs
Grated cheese
2 Tortilla bread
Oil(rapeseed or other of your choice) for frying

Chop the onion and tomato into small pieces. Pour some oil into a frying pan and fry the onion on medium heat. When the onion starts to soften, add the chopped tomato. Fry until the tomato has become a little softer in texture.

Whisk the eggs lightly in a bowl with a little salt. Add the eggs into the frying pan with the onion and tomato. Allow the bottom to set before you start to scramble.

Place the scrambled eggs on a plate.

In the same frying pan, add a little oil and one tortilla bread. Sprinkle some grated cheese and spread the scrambled eggs on top. Sprinkle some cheese again before covering it with another tortilla bread. Press lightly to seal.

Heat the quesadilla for a couple of minutes on each side until the cheese has melted.
